The process of baking bread is split up into

- Resting

- Baking
You let the dough and loaf rest at various stages
- before kneading (autolyse, 1h)
- after kneading (for 24h)
- after shaping (for 24h)
- after baking (for 1-2h)
Resting is as much a part of baking as kneading or baking.
Kneading creates a crust that keeps the crumb moist. It shapes the bread, by creating a surface tension.
